How to Keep Celery Crisp and Fresh for Up to a Month
Published on June 7, 2026The Science Behind Limp Celery
We’ve all been there: you buy a beautiful, crunchy bunch of celery for a recipe, use two stalks, and toss the rest in the fridge. A week later, you retrieve a rubbery, bendable mess. The culprit behind this rapid decay is ethylene gas—a natural ripening hormone that celery produces. When celery is stored in its original plastic grocery bag, this gas gets trapped inside, accelerating the aging process and turning your crisp stalks limp and hollow.
The Secret Weapon: Aluminum Foil
To keep celery fresh for up to four weeks, you need to ditch the plastic and reach for aluminum foil. Foil is sturdy enough to retain the celery's moisture, but unlike plastic, it is porous enough to allow ethylene gas to escape. Here is how to do it step-by-step:
Step 1: Remove the Plastic and Prep
Take the celery out of its original plastic sleeve or bag. Throw the plastic away. Do not cut the celery stalks apart or chop off the root base; keeping the head intact preserves its natural moisture and extends its shelf life significantly.
Step 2: Keep It Dry (Do Not Wash Yet)
Moisture is the enemy of preservation. If the celery feels damp from the grocery store misting systems, gently pat it completely dry with a clean kitchen towel or paper towel. Do not wash the celery until you are ready to eat or cook with it, as excess water trapped between the stalks will encourage mold growth.
Step 3: Wrap Tightly in Aluminum Foil
Tear off a sheet of standard aluminum foil large enough to wrap around the entire head of celery. Place the celery on the foil and wrap it tightly, folding in the top and bottom edges. The goal is to wrap it snugly enough to keep moisture in, but not so airtight that the gas can't slowly diffuse out. Do not use plastic wrap over the foil.
Step 4: Store in the Crisper Drawer
Place your foil-wrapped celery bundle in the crisper drawer of your refrigerator. This environment provides the optimal temperature and humidity control to keep it in peak condition. When you need a stalk, simply unfold the foil, snap one off, and wrap the rest back up.
Bonus: How to Revive Celery That Is Already Limp
If you have celery that has already started to go soft, don't throw it out! You can easily revive it using a simple ice bath technique:
- Cut the stalks: Trim the bottom root and cut the limp stalks into individual sticks.
- Submerge in ice water: Place the celery sticks into a large bowl or jar filled with ice water.
- Chill: Place the container in the refrigerator for 30 minutes to an hour. The cells of the celery will draw in the cold water through osmosis, restoring their structural integrity and making them remarkably crisp again.
